Quinoa Salad

Quick recipe for last weeks healthy and delicious meal prep • I was supposed to make the same this week but I almost fell asleep at the dinner table last night 🙊•

Wash and drain 200g of quinoa and then bring to the boil with 400g of stock • cut up red peppers, cherry tomatoes, cucumber and spring onions • mix the vegetables with 2 tsp vegetable oil, 2 tsp lemon juice, fresh basil and a sprinkle of salt •

Let the quinoa cool down before mixing everything together • as an extra, you can crumble feta on top •
