Roasted butternut squash, puy lentils and goats cheese🧀

Heat your oven to 160•, toss 100g kale in oil and coat with 1bsp sesame seeds and chilli flakes • make sure the kale is cover and bake for 15-20 minutes
Once the kale is done, turn the oven up to 200• and add the sliced butternut squash (800g 1cm thick) • drizzle over oil and bake for 30-40 minutes •
Add sage leaves to a frying pan for 15 seconds, fry pumpkin seeds for a few minutes until crunchy • we then used a pomegranate creamy sauce to dress the 250g lentils •
Add the crispy kale and squash to the lentil, crumble goats cheese on top and add the sage leaves and pumpkin seeds • enjoy whilst it’s all still warm!•
