In the oven, roast butternut squash, red onion and red peppers till soft • cook enough Couscous to last the whole meal prep • .
Add feta, half an avocado and salad dressing of your choice (I use the weight watchers Caesar salad dressing) and enjoy • you could probably warm it up before adding the extras on a cold day •
