Jam filled thumbprint cookies 🍪
Pre-heat oven to 180•, line a tray with grease proof-paper • beat together 1 cup of butter and 2/3 cup sugar until light and creamy • beat in 2 large egg yolks and 1 tsp vanilla extract •
To form the dough, mix in 2 cups all-purpose flour and 1/2 tsp salt • form 1 inch sized balls and squash in the middle with your thumb •
Bake for 8-10 minutes before adding the jam • bake for a further 3-4 minutes • take them out and place on racks to cool •

P.s I used gf flour so they turned out a little cracked...but still amazing 🙊
